Applesauce Spice Cake a la Margaret Joyce

 

3 ½ cups sifted cake flour (sift before measuring)

2 tsp baking soda

1 tsp salt

3 tsp cinnamon

2 tsp allspice

2 tsp nutmeg

½ tsp ground cloves

1 cup raisins

1 cup walnuts, chopped

1 cup shortening

2 cups white sugar

2 eggs, beaten

2 cups unsweetened applesauce

 

Sift flour, soda, salt and spices together 3 times. Cream shortening with sugar until fluffy. Add eggs and beat thoroughly. Add sifted dry ingredients and applesauce alternately in small amounts, beating well after each addition.

 

Pour into greased pan and bake in moderate oven 350 degrees for 45-60 minutes. (Cupcakes take only about 20-25 mins – after browned and/or when toothpick comes out clean)

 


Cream Cheese Frosting

 1 8oz package cream cheese

¼ cup butter, softened

1 cup powdered sugar (I poured in more to make it less buttery and sweeter)

 ½ tsp vanilla

 
Mix cream cheese and butter until creamy. Mix in vanilla and then slowly add sugar.
